Fennel and cucumber cooler

Clear up your fridge, clear up your stomach!

There's always that day when you look in your fridge and you have a little bit of everything, but not enough to make a cohesive dish. You can make a salad, or you can toss it all together in a smothie and go for a walk :)

Ingredients

  • 1 avocado, peeled and chopped in few pieces

  • 1/2 fennel bulb

  • 1 cucumber, medium size

  • 1 1/2 cups of spinach

  • 2 spoons of flax seeds

INSTRUCTIONS

1. Blend spinach first with water.
2. Put the rest of ingredients in the mixture and blend again till desired smoothness.
3. This particular mix can be well supplemented by green apple or lemon if you want to add some acidity to this refreshing cucumber taste. Can be used a s a base for smoothie bowl due to thickening nature of flax. Add more avocado if smoothie seems too "pulpy".
